Butter Cookie Crusted Carnivore-ish Cheesecake (aka super low carb)

Ingredients:

1 batch of the Butter Cookie Mix

2 packages (500 grams)  Philadelphia cream cheese, softened to room temperature

1 package (300 grams) Kirkland goat cheese (or other plain goat chevre cheese)

2 pasture raised eggs

1 lemon, juiced

1 tsp vanilla

1 tbsp sugar

1 tsp stevia

Directions: 

Make one batch of cookie mix as directed on the package. Let cookies cool. 

Blend cookies in a food processor and press into a springform pan. 

Bake at 350 F for 10 - 12 minutes. Remove from the oven and let cool. 

Cake batter:

Cream the cheeses together. Add the sugar & stevia. Add the eggs one at a time. Then add the lemon juice and vanilla. Blend well. Pour into the prepared springform pan and bake at 350 F for 40-45 minutes. Chill in the refrigerator several hours before serving. 

The Butter Cookie Mix crust adds a deep, buttery contrast beneath the velvety cheesecake filling.
