85% Dark Chocolate Chunk Cookies

Buttery, golden, and loaded with generous chunks of Lindt chocolate—this cookie is crisp at the edges, tender through the center, and unapologetically indulgent. Made with the Tallow & Crumb Butter Cookie Mix as its base, it’s a classic done properly. Still keto & low carb & carnivore-ish!

Ingredients:

1 cup (111 g) The Butter Cookie Mix

1 large pasture-raised egg

1/3 cup (75 g) salted butter (or tallow plus a pinch of salt)

2 squares Lindt 85% (or your favourite) chocolate bar, broken into small chunks

Directions:

Cream the butter. Add the egg.

Add the cookie mix. Do not overmix. Add chocolate chunks and hand stir them in.

Place in refrigerator for 30 mins.

Drop dough onto parchment lined cookie sheet.

Bake 325 12-15 minutes.

Makes 10-12 cookies.

Let cool before indulging!
