Primal Chocolate Cream Pie
A layered primal dessert with a buttery cookie crumb crust, silky chocolate filling, and an easy mascarpone cream topping.
Step 1: Bake the Cookies
Cookie Ingredients
* 1 cup (111g) Tallow & Crumb Butter Cookie Mix
* 1/3 cup (75g) butter, softened
* 1 egg
(Prepared according to package directions)
Method
1. Preheat oven to 325°F (165°C).
2. Cream the softened butter until smooth.
3. Add the egg and mix well.
4. Add the cookie mix and stir until a dough forms.
5. Portion into rough cookies on a baking tray.
6. Bake 12–15 minutes, until lightly golden.
7. Cool completely.
Step 2: Make the Crumb Crust
Additional ingredient
* 2 tbsp melted butter (if needed)
Method
1. Add cooled cookies to a food processor.
2. Pulse into fine crumbs.
3. If needed, add melted butter for extra binding.
4. Press firmly into the base of a springform pan, like a cheesecake crust.
5. Bake 10–12 minutes.
6. Cool completely.
Step 3: Make the Chocolate Layer
Ingredients
* 4 oz Dark chocolate
* 3 tbsp butter
* 2 egg yolks
* 1/2 cup heavy cream
* 1 tsp vanilla
* pinch sea salt
* 1 tbsp maple syrup (optional) or monk fruit to taste
Method
1. Warm heavy cream in a saucepan over low heat until steaming.
2. Add chocolate and butter and stir until melted and smooth.
3. In a separate bowl, whisk egg yolks.
4. Slowly whisk a little warm chocolate mixture into the yolks to temper.
5. Return yolks to the saucepan and whisk until smooth and glossy.
6. Stir in vanilla, salt, and sweetener.
7. Pour over the cooled crust.
8. Refrigerate 20–30 minutes until set.
Step 4: Make the Mascarpone Cream Layer
Ingredients
* 250g Mascarpone
* 1 cup heavy cream
* 2 egg yolks
* 1 tsp vanilla
* pinch sea salt
* sweetener to taste (optional)
Method
1. Add all ingredients to a food processor.
2. Blend until smooth, thick, and creamy.
3. Spread evenly over the chilled chocolate layer.
That’s cleaner, faster, and more realistic for video. Less bowl clutter, fewer cuts, better pacing.
Step 5: Chill & Finish
Cover with cling film.
Refrigerate for 3 hours minimum or overnight.
Before serving:
Dust generously with Cocoa powder.
Optional:
* shaved chocolate
* flaky sea salt
Slice cold and serve.
This is one of those desserts that gets better after sitting overnight — the structure tightens and the flavour deepens.
